  4. It’s 1/3 cup of pure maple syrup.
  5. You need 4 of 4-6 oz. salmon fillets, without skin.
  6. You need 1 package of frozen, chopped spinach.

Maple Glazed Salmon with Cooked Spinach instructions

  1. Preheat oven to 400°F.
  2. Line a baking pan with parchment paper and coat paper with cooking spray.
  3. Place orange juice, syrup, ginger and garlic in a small pan over medium heat, and bring to a boil. Reduce the heat to medium-low and simmer for 8 minutes or untilslightly reduced and syrupy.
  4. Place salmon on prepared tray. Reserve half the maple glaze. Pour remaining glaze over salmon fillets.
  5. Bake for 12-18 minutes. Salmon should flake easily with a fork. Thermometer inserted into center of salmon should read > 145°F. Drizzle reserved glaze over salmon and serve with spinach. Serves 4.
