Matoke Step by Step
- In a pan on heat add in a sizeable amount of oil, add in your onion cook till golden brown color.
- Add in your tomatoes, stir 2-3 min. then add in your clean potatoes.
- Cover them for 10 minutes to cook, then add in your pumpkin with the green bell pepper stir them to mix, and cover it to cook for 20 minutes.
- Add in your raw bananas stir well cover it for 5 minutes.
- Add in your black beans, salt to taste and your seasoning I used black pepper, stir and let it cook for 5 minutes as you stir.
- Add in some little water for it to cook(level of the water should be slightly below the level of the food).
- Cover it to cook.
- After approx. 20-30 minutes keep checking if the water is no more.
